Review: Anji Bai Cha Special Grade
Tasting Notes
Despite the “bai cha” name, this is considered a green tea. But it gets its name from the look of the dry leaves, which are paler in color than most green tea leaves. While mine weren’t white exactly, I love the look of these uniform, precise needle tips.
The tea is initially is furry and silver, but in the hot water it begins to show a vibrant green as the tea leaves unfold. You can get a glimpse of the color as well my well-loved little teapot in this photo.
The smell is very faint, a subtle hint of toasted nuts. After a long steep (I found that it took longer than the one minute recommended by the description), the flavors develop into a smooth, grassy tea. The flavors are enjoyable, but far too subtle and light for my taste.
